DESCRIPTION
Seiryu, which means “clear stream,” is one of the signature sakes from Tatenokawa, a historic sakagura in Yamagata Prefecture that specializes exclusively in the production of Junmai Daiginjo.
The name perfectly describes its style: clear, light, fresh, and smooth.
It is produced using exclusively Dewasansan, a sake rice developed in Yamagata Prefecture, polished down to 50% of the original grain size.
Its alcohol content of 14%, slightly lower than many traditional sakes, contributes to making it particularly elegant and approachable.
Delicate fruity and floral aromas emerge on the nose, with hints of green apple, pear, fresh grapes, and white flowers. On the palate, it is soft and clean, with a pleasant freshness, subtle acidity, and a delicate, harmonious finish.
It is a Junmai Daiginjo capable of combining elegance with drinkability, ideal both for those approaching sake for the first time and for those seeking a refined, yet not overly opulent, style.
