The Hon Mirin Shippou Sake-Kasu-Dori Shoshu Jikomi is a Japanese mirin of rare complexity, produced by the historic Yoneda Shuzo, an artisanal mirin maker for over a century.

Unlike industrial mirin, this traditional hon mirin is made from essential ingredients and artisanal processing: glutinous rice, rice kōji, and shōchū kasu, the lees derived from shōchū production. These are traditionally distilled, contributing to a particularly rich, deep, and enveloping aromatic profile.

Its amber color and syrupy consistency immediately reveal its gastronomic character. On the nose, it expresses evolved notes of honey, brown sugar, cocoa, vanilla, dried apricot, maple, and woody nuances. On the palate, it is soft, intense, and persistent, with hints of caramel, coffee, cocoa, and aged rum.
