DESCRIPTION
Very refined sake because it is produced with extremely polished rice. The rice grains used for the production of this sake are individually hand-selected and polished inside the sakagura. The long and low-temperature fermentation gives it a soft but persistent flavor. The resulting ferment is then left to mature for 6 months, thus acquiring a more pronounced and dry taste.
We like it because it can be enjoyed at all temperatures: cold for a refreshing taste, or heated for an exceptional flavor. In our opinion, it actually expresses its characteristics best when served hot: it has a truly smooth taste on the palate!
FOOD PAIRING
Depending on the chosen temperature, it can be paired with prawns, tofu, or fried foods (served hot) or with more delicate foods, such as sushi, sashimi, tuna tartare, or carpaccio (served fresh).
CURIOSITY'
Produced with "Toyonishiki" rice grown in Motowada, Takahata-cho, Yamagata Prefecture. It is a very tasty and flavorful rice that can be enjoyed with a wide range of foods; these characteristics are also found in the Sake. And just as Toyonishiki rice can be eaten every day without ever getting bored... this Sake can be drunk every day without ever getting bored!
