Very refined sake because it is produced with extremely smooth rice. The rice grains used for the production of this Sake are individually selected by hand and polished inside the sakagura. The long and low temperature fermentation gives it a soft but persistent flavor. The fermented product obtained is then left to mature for 6 months, thus acquiring a more decisive and dry taste.
We like it because it can be enjoyed at all temperatures: cold for a refreshing taste, or heated for an exceptional taste. In fact, in our opinion, it expresses its characteristics at its best when it is served hot: on the palate it has a really soft taste!
Depending on the temperature chosen, it can be paired with prawns, tofu or fried (served hot) or with more delicate foods, such as sushi, sashimi, tuna tartare or carpaccio (therefore served fresh).
Made with "Toyonishiki" rice grown in Motowada, Takahata-cho, Yamagata Prefecture. It is a very tasty and savory rice, which can be enjoyed with a wide range of foods; these characteristics are also found in Sake. And how Toyonishiki rice can be eaten every day without ever getting bored .... this Sake can be drunk every day without ever getting bored!
