DESCRIPTION 

Kenbishi is very classic - it maintains very traditional Sake production methods, such as the Yamahai method. Made with 100% of the king of Sake rice "Yamadanishiki." "Zuisho" means 'sign of a happy thing.' This sake is a blend of Sakes aged from 5 to 15 years, which give it the characteristic golden color. Kenbishi produces this sake only once a year: it is a super limited edition. Complex and structured bouquet. Cocoa and dried fruit on the nose, creamy texture with a warm combination of spices and honey. Rich and complex with a long finish.

We like it very much because it is also a sake for meditation 

*By the term yamahai is meant a type of kimoto method in which the mixing action is avoided to generate lactic acids. 

 

FOOD PAIRING 

Stews, wagyu, aged cheeses, truffles, mushrooms, but also chocolate and dried fruit, with vanilla ice cream or as a dessert.  

In Japanese cuisine: salmon, black cod, wagyu, foods with a full flavor and rich in umami, in general. 

 
CURIOSITY' 

Kenbishi is the oldest sake company in Japan, founded in 1505! Its traces are found in history books and paintings of the era, we can find its characteristic logo. 

The sake is then aged in steel tanks, this is the only innovation brought to this sakagura, where even today they still build all the necessary tools for production.
