DESCRIPTION
Kenbishi is very classic - it maintains very traditional sake brewing methods, such as the Yamahai method. Produced with the king of rice from 100% “Yamadanishiki” Sake. "Zuisho” means 'sign of a happy thing'. This sake is a blend of sake aged from 5 to 15 years, which gives the characteristic gold color. Kenbishi produces this sake only once a year: it is a super version limited. Complex and structured bouquet. Cocoa and dried fruit on the nose, creamy texture with a warm combination of spices and honey. Rich and complex with a long finish.

*The term yamahai means a type of kimoto method in which the mixing action to generate lactic acids is avoided.
FOOD PAIRING
Stews, wagyu, mature cheeses, truffles, mushrooms, but also chocolate and dried fruit, with vanilla ice cream or as an end to a meal.
In Japanese cuisine: salmon, black tail, wagyu, foods with a full flavor and rich in umami, in general.
CURIOSITY
Kenbishi is Japan's oldest sake company, founded in 1505! His traces are found in history books and paintings of the time we can find its characteristic logo.
The sakes are aged in steel tanks, this is the only innovation brought to this sakagura, where they still make all the tools necessary for production today.
