The Shun Premier Tim Mälzer series has been optimized to meet the needs and demands of professional chefs. This top quality series combines the excellent characteristics of the materials of the well-known Shun Classic series with a new and impactful overall aesthetic. The blade has three different surfaces: from the back to the center, the surface is hammered, a process known in Japan as Tsuchime. Then we move on to an opaque damask, typically Shun. Finally, finally, to the mirror-polished precision wire. This intricately crafted blade is combined with a mottled medium brown walnut handle.
